Background
Amylose is a linear polysaccharide composed of D-glucose units linked by α-(1,4)-glycosidic bonds. It is one of the two major components of starch, alongside amylopectin. In plants, amylose serves as a crucial energy storage molecule. The linear structure of amylose allows it to form a helical shape, which is responsible for its characteristic reaction with iodine, producing a deep blue color.
