Introduction
Ovalbumin (OVA) is the main protein found in egg white, making up 60-65% of the total protein. OVA displays sequence and three-dimensional homology to the serpin super family. OVA 257-264 is a class I (Kb)-restricted peptide epitope of OVA, presented by the class I major histocompatibility complex (MHC) molecule, H-2Kb. It has been demonstrated that OVA 257-264 peptides can be used to detect a strong CD8+ cytolytic T cell response.
