Background
Pectin is a complex polysaccharide found in the cell walls of plants. It is composed primarily of polygalacturonic acid with various neutral sugar side chains. Due to its ability to form a gel in the presence of sugar and acid, pectin is widely used as a gelling agent and thickener in jams, jellies, and other food products.
