Description
Ascorbyl stearate is an ester compound formed from the condensation of L-ascorbic acid (Vitamin C) and stearic acid. This fat-soluble derivative is utilized as a source of Vitamin C and, most notably, as a lipid antioxidant food additive to prevent fats from becoming rancid, commonly in products such as margarine.
