Carboxypeptidase Y is an acidic serine glycoprotein exopeptidase from Saccharomyces cerevisiae that cleaves the terminal amino acids at the C-terminus of peptides, including proline. At 25°C and pH 6.5, one unit of carboxypeptidase Y can hydrolyze 1 µmol of benzyloxycarbonyl-L-phenylalanyl-L-leucine per minute.
