This research employed a machine learning technique, specifically a random forest (RF) classifier, to differentiate various types of tea based on their chemical makeup. The investigation centered on 19 distinct chemical compounds identified within the teas, with Figure 1A visually representing the application of this classification methodology. The effectiveness of this model in distinguishing between the different tea categories is detailed in Figure 1B. Figure 1C highlights the chemical constituents that proved most influential in this differentiation. Among these, GC, EGCG, and ECG are significant components of tea catechins and were pinpointed as critical indicators for tea classification. The study also observed that these catechin compounds responded uniquely to different thermal processing methods during tea production. Lastly, Figure 1D offers a visual summary using Principal Component Analysis (PCA), illustrating how the six distinct tea types (dark, black, green, yellow, oolong, and white) are spatially distributed and grouped based on their chemical profiles, providing insight into their underlying similarities and differences.
