Polysaccharides are complex carbohydrate polymers of simple sugars linked together covalently by glycosidic linkages in a condensation reaction. Some polysaccharides are homogenous polymers that contain only one kind of sugar, while others are complex heterogeneous polymers that contain 8-10 types of sugar. The different sugar units may have different anomeric configurations or be formed by different glycosidic linkages. Polysaccharides may be linear or branched. All polysaccharides are present in a range of molecular weights rather than having a single molecular weight.
