Carbohydrates are appealing non-ionic surfactant head-groups as they are naturally abundant, generally biocompatible and biodegradable, and readily functionalized. They are growing important renewable raw materials for the surfactant industry. Carbohydrate-based surfactants are among the most important classes of amphiphiles, which are molecular architectures with parts exhibiting different types of polarity, generally including hydrophilic and hydrophobic groups. The structures of carbohydrate-based surfactants are the results of the saccharide and lipid combination. They are naturally biosynthesized within living cells, or chemical synthesis by sequential reactions using carbohydrate and fatty materials, through one or several bonds. Carbohydrate-based surfactants are gaining increased attention due to advantages with regard to performance, health of consumer and environmental compatibility compared to some standard products. Moreover, studies have shown that carbohydrate-based surfactants with specific modifications are able to incorporate biological functionalities, such as antibacterial activity.
